The Zucchini Still Cometh

Um, yeah, you can expect a couple more thoughts about zucchini in the next month.  The tone may become slightly less cheery and enthusiastic as the summer progresses, but for now, we’re still delighted to see the little green monsters hiding under the manhole-sized leaves.

Here is one of the biggies, that my kids wanted to let grow past tenderness just for the sheer dizzy pleasure of humongous-ness.

When zucchini gets past a certain point, stuffing it, or grating it into breads and muffins are its best fate, since it no longer has the tender sweetness of its younger siblings.

So, do you want to guess how many muffins I got out of that bad boy?  60.  60 muffins out of one zucchini.  So, you know that old saw about not being able to give away zucchini in late summer?  Well, it turns out that it’s way easier to give away zucchini muffins.

    Is that the Prize-winning zucchini we’ve been watching all summer? Or just an offspring?

    it’s the sibling! The big guy is still lying there like a baseball bat…we’re letting it go until it won’t go no more.
