While the global marketplace of groceries makes it possible to eat tomatoes year round, it’s not until the months of fresh, local, never-refrigerated tomatoes, red and ripe and still warm from the sun, that we realize what we’re missing during all the other seasons. To make the most of in-season tomatoes, here are a selection of recipes from Cookstr that celebrate plum, beefsteak, cherry, heirloom, and more varieties of this favorite fruit.
