Penne with Tomato and Basil by Jamie Oliver

While the global marketplace of groceries makes it possible to eat tomatoes year round, it’s not until the months of fresh, local, never-refrigerated tomatoes, red and ripe and still warm from the sun, that we realize what we’re missing during all the other seasons. To make the most of in-season tomatoes, here are a selection of recipes from Cookstr that celebrate plum, beefsteak, cherry, heirloom, and more varieties of this favorite fruit. This Penne with Tomato and Basil recipe, for example, calls for roasted cherry tomatoes tossed with fresh basil, Kalamata olives, and some pecorino. Can’t it be summer all year long?
