The Cookstr Weekly: Chilly Outside, Chili Inside!

There’s nothing like hot and spicy foods to keep you warm from head to toe as the temperature drops, and chili tops our list. While battles over what constitutes “real chili” rage on (beans? tomatoes?), we’re happy to reap the spoils with this collection of everything from traditional chili con carne to vegetarian and vegan dishes. TJ’s Black Bean and Turkey Chili, by Sharon Kramis and Julie Kramis Hearne, is made in a Dutch oven with beans, tomatoes, and lean ground turkey. It’s done in 30 minutes, making it an ideal weeknight solution. And of course, don’t forget the cornbread!

“One of the reasons muffins are so popular is because they are quick and easy to make and full of flavor. Adding the liquid all at once to the dry ingredients actually is called the ‘muffin method’ and makes muffins that are light and tender with an even texture inside. Serve these muffins warm from the oven with apple butter.”

The “muffin method” Pat refers to here, one of two general mixing methods used in baking, means that the wet and dry ingredients can be mixed separately the night before and kept in the refrigerator until ready to bake. The batter should still have lumps after mixing.
