It’s hard to beat the comfort of a warm casserole on a cozy night. But leave the canned tuna and potato chips in the cupboard – we’ve got some more inventive ideas for you. Filled with ingredients from escarole to quinoa, casseroles can be as good for you as they are comforting. As Cat Cora writes in the headnote to Baked Eggplant with Meat and Bechamel Sauce, My mom made moussaka all the time when I was a girl, and it was one of my least favorite meals. My brothers, Mike and Chris, and I would groan when she brought out the baking dish filled with steaming eggplant and meat sauce layered with béchamel. My mom and dad both loved it, so she just kept making it and ignoring her children. Good thing, too. It’s a mystery to me how a food you disliked as a child can become an adult favorite, but that’s how it is with moussaka. These days, I see a good moussaka, and my mouth begins to water.”

Trick or Treat!

Get into the Halloween spirit with homemade treats that have a few tricks up their sleeves (or sheets). These Friendly Ghosts by Julia Usher are made of meringue cloaks that are hiding a chewy, gooey filling of dates, pecans, spices, orange peel and Grand Marnier. Miniature chocolate chips finish off their costumes as little eyes. For a quicker and more kid-friendly option, you can omit the filling and keep the cute, spooky effect! These are portable enough to bring to parties, if you use airtight containers to keep the meringue from retaining moisture.
