For this last newsletter of 2012, we’re presenting a menu of New Year’s Eve treats that steers away from the cheese balls and shrimp cocktails of old, heading towards a new palate for 2013. Not everything has changed in the past year – the world hasn’t ended, we still adore kale Caesar salads, and our cultural love affair with bacon sustains itself to live another day. But New Year’s is a chance to think a little bigger, extend our reach a little wider, and explore a new range of flavors for 2013.
 
Our New Year’s resolution is to share with our readers even more recipes that are different, providing not only the tested, trusted quality you expect, but unique recipes that stand out from the pack, bringing delight. The sampling below is just the beginning.

Whole Roast Duck with Hoisin Sauce

I remember a childhood New Year’s Eve at a dear friend’s house at which whole roast duck was served, head and all. That duck, like Molly Stevens’ here, was indulgent and celebratory, characterized by the juicy dark meat and the crispy, crackling, sweet-savory skin. In this recipe, Molly provides a few tricks that make this ambitious dish feasible for any home cook: pre-salt the duck and keep it for 24 hours in the refrigerator before slow-roasting it to tender completion. Easiest of all is to roast the duck a day in advance, then let it cool before breaking it down and blasting it with high heat to render the flesh warm and the skin crispy just before serving.

New Year’s Eve Wine Pairings

Most cultures have traditional foods believed to bring good luck in the New Year. In Spain and Portugal, celebrants eat 12 grapes as the clock strikes midnight to represent each month of the coming year. To help you usher in a fantastic 2013, we’ve collected some lucky recipes and paired them with favorite recommendations from Blush for Wine, an app to help you find wines you love, which you can download free  in the App Store.

Fish and seafood are auspicious meals to have for New Year. Italians eat baccala, dried salt cod, throughout the holiday season. This recipe is a traditional version from Lake Trasimeno. Pair it with Italy’s traditional Primitivo. Blush recommends Layercake or Milleuna Primitivo.

Hoppin’ John, a popular Southern dish, focuses on pork, considered lucky since pigs root forward, embracing what’s ahead. Try pairing it with a full-bodied Zinfandel from California like one from Bella or Pedroncelli vineyards.

Round foods are popular for good luck, symbolizing the cycle of one year moving into the next. Ring-shaped cakes and cookies, or even doughnuts, are popular at celebration tables. This recipe features Mediterranean flavors including orange and almond. Pair a Moscato D’Asti with fresh fried doughnuts for a lively feast. Blush recommends Italian makers Marco Negri or Bartenura.
